Ingredients
- 200 gr of fresh salmon
- 200 gr of smoked salmon
- 1/2 liter of milk
- 1 star anise
- 1 TBS fennel seeds
- 1/2 bunch of dill
- 100 gr of butter pomade
- 1 lemon juice
- Salt, pepper
Procedure
For half an hour, infuse the star anise and the fennel seeds in warm milk. In the infused milk, poach the fresh salmon roughly cut in chunks for 10 mn. Remove from milk and let it cool. Mix poached salmon, smoked salmon, butter pommade, chopped dill, lemon juice, salt and pepper.
Refrigerate for 2 hours minimum before serving.
