Pasta Dough : More flavor and color coming out !

In my series of posts on pasta dough, I found some interesting materials about flavoring or coloring items. We already know colored pasta with carrot and spinach pureed. Some more unusual colors are black or purple.
The black color is obtained by using squid ink. You can buy it in bottle from any gourmet market or on line. Here are the ingredients for the dough :

Fresh Squid Ink Pasta Dough

  • 2 cups all purpose flour (16 tablespoons)= ~455 gr
  • ¼ cup white wine (2 TBS)
  • 3 egg yolks
  • ¾ ounces squid ink = ~25ml

The purple color comes from the beet vegetable.

Fresh Beet Pasta Dough

  • 2 medium red or golden beets
  • 2 TBS olive oil
  • Coarse salt
  • 2 large eggs
  • 1 large egg yolk
  • 2½ cup all purpose flour (24 TBS)

You will have to puree the beet by using a food processor.

I also found the flavorful pasta dough recipe using white wine. Here are the ingredients :

  • 2 cups all purpose flour (16 tablespoons) = ~455 gr
  • ¾ cup white wine (6 TBS)
