  • 175 gr sugar
  • 8 egg yolks
  • 1 whole egg
Procedure
  • Boil milk with sugar
  • Melt chocolate (bain marie). Let cool a bit
  • Mix milk and chocolate
  • Pour on egg yolks and whole egg. Mix but don't get too many bubbles

Tiramisu

Ingredients

  • 4 eggs
  • 4 TSB sugar
  • 350 gr mascarpone
  • ladyfingers
  • 1 cup expresso coffee
  • Unsweetened cocoa powder
  • Amaretto (opt.)

Procedure
  • Mix egg yolks, sugar and mascarpone
  • Add stiff peaks whites and mix gently
  • Soak ladyfingers in coffee(do not over soak to keep some crunchiness)
  • In a rimmed dish, lay alternatively biscuits and mascarpone mixture on several layers while sifting cocoa powder on top.

Tip : if you plate in individual small glasses (verrine), use a pipping bag to fill the mascarpone mixture (it will prevent sides to be dirty)
