Chosen from a recipe book Les 118 Recettes Francaises, mixing old style recipes and modern variations, this simple fast and tasteful recipe of a chicken liver paté :
Ingredients (yield = 4 portions)
- 150 gr butter
- 250 gr chicken liver
- 1 to 2 miced schallots
- 2 juniper berries
- 1 bay leaf
- 2 TBS cognac
- S&P
Procedure
- Melt butter and sear livers with shallots, bay leaf and berries for 5 mn (should be pink inside)
- Mix all ingredients in a robot coupe with the butter.
- Serve in ramequins or terrine dish...
